Researchers at Stanford University have developed an artificial intelligence that designs individual burger recipes and, in a blind test in San Francisco, matched the Big Mac in both taste and sustainability.
In a restaurant in San Francisco, 101 volunteers were served five professionally prepared, AI-designed burgers as well as a Big Mac for comparison in a blind test. The testers rated taste, texture, and overall impression on a seven-point scale. The AI creations achieved at least the values of the well-known comparison product in all three categories. The team published the results in the journal npj Science of Food.
